Rooted in LORE’s philosophy of culinary storytelling, ‘The Southern Chapter’ journeys across the South, drawing inspiration from the spice-rich kitchens of Andhra and Chettinad, the coconut-led flavours of Kerala, the coastal traditions of Mangalore and the comforting culinary heritage of Karnataka and Tamil Nadu. The menu brings together traditional flavours with contemporary interpretations, creating a chapter that celebrates the region’s rich culinary landscape.
Speaking about the curation, Chef Kush Koli says, “The true motivation behind ‘The Southern Chapter’ was the incredible variety hidden within South Indian culinary traditions. We wanted to venture far beyond the usual classics diving into everything from the fiery, robust spices of Andhra and Chettinad to the coconut-laden, coastal flavours of Kerala and Mangalore. Our goal was to honour these distinct regional techniques and native ingredients, crafting a menu where every single dish tells its own unique story.”
The experience features dishes such as Chilled Filter Coffee, Tender Coconut Ceviche, Gongura Mamsum, Rice & Lentil Appe, Charminar Thatte Idli, Kerala Prawn Curry with Idiyappam, Mangalorean Vegetable Gassi with Appam, Chicken Perattu with Salan and Thalassery Biryani. The menu also features Benne Kari Dosa with Vegetarian, Chicken and Mutton preparations, alongside the Historic Jaozi Halwa with Bakharkhani to conclude the experience.
