Indigenous food and the local seasonal ingredients have always inspired me as I grew up seeing my Ajji (grandmother) and my Aai (mother) cooking using ingredients like fresh coconut, Kokum, chilis, fresh green vegetables, etc. The magic of Maharashtrian food lies in its masalas & every home has its own composition of the quantities of spices which gives the masalas their unique flavors, bringing out the uniqueness of each dish in different families. At ITC Windsor, we have tried to bring the essence of the cuisine with two different kinds of thali comprising of the best of Maharashtra”.
