From the smoky flavours of grilled meats to slow-cooked regional specialities and traditional desserts, the food cultures of Greece and the Balkans offer a rich expression of history, geography and local traditions. Pullman New Delhi Aerocity presents these influences with a special culinary showcase by Chef Ufuk Evrim Karadağ at Farmers’ Basket at Pluck, from October 23 to November 1, 2026, available during dinner and Sunday brunches.
With over 25 years of experience in Greek, Turkish and Mediterranean gastronomy, Chef Karadağ brings an extensive understanding of the region’s culinary heritage to the showcase. A chef, researcher and educator based in Istanbul, his work draws on traditional recipes, regional ingredients and the food cultures that connect the Mediterranean basin.
The menu brings together an assortment of savoury preparations, including Lamb Ćevapi, Tavuklu Sultan Kebabı, Bosanski Lonac, Kabak Mücver and Hünkâr Beğendi. Guests can also discover vegetable pilav and bulgur, alongside İmam Bayıldı, the traditional preparation of eggplant stuffed with onion and tomato, and Sataraš, a vegetable-based dish associated with Balkan cooking.
The experience extends to a selection of traditional desserts, with Sütlaç, a creamy rice pudding, Trileçe, Revani, Tufahija and Baklava offering a sweet conclusion to the meal. Together, the dishes bring varied regional influences to the table, reflecting the diversity of Turkish and Balkan cooking and its enduring emphasis on generous, shared dining.
Commenting on the promotion, Manish Dayya, General Manager, Pullman and Novotel New Delhi Aerocity, said, “Food offers a fascinating way to understand a region, its people and the traditions that have shaped its identity. With Chef Ufuk Karadağ joining us at Farmers’ Basket at Pluck, we are bringing the distinctive food cultures of Greece and the Balkans to our guests through a menu that spans familiar Mediterranean influences and regional specialities. It is an opportunity to discover new flavours, appreciate the stories behind traditional dishes and enjoy a different culinary experience at our hotel.”
Farmers’ Basket at Pluck provides the setting for this showcase, inviting guests to explore these regional flavours over a leisurely Sunday brunch or dinner with family and friends.
