His impressive journey includes luxury properties such as Barceló Whale Lagoon and Barceló Nasandhura in the Maldives where he led the culinary teams for these two award-winning resorts and played an important role in their successful openings. His previous experience at Barcelo Hotel Menorca saw him innovating with signature dishes and collaborating with local producers to highlight the essence of seasonal cuisine and local culture.
Passionate about Mediterranean gastronomy and inspired by Asian flavors, Chef Marco crafts dishes that celebrate authenticity while embracing contemporary trends and sustainable practices.
His career includes time in Michelin-starred kitchens of The Ritz London and collaborations with top chefs like Diego Gallegos.
At Barceló Coconut Island, he will lead the culinary vision across four resort outlets: Kabana restaurant for vibrant global flavors, Kucina for authentic Italian indulgence, Japanese restaurant Koko for sophisticated Asian dining, and the newly opened Laku Beach Club offering tapas and fresh seafood by the ocean. Guests of the hotel can expect outstanding dining experiences and variety of gastronomic events that blend local heritage with international flair.
