For this special showcase, Visiting Chef Sushma Kumar, a Bihari food specialist and home cook, brings her understanding of authentic regional flavours to Kaansa, rooted in preserving and sharing the traditional food of Bihar. Working alongside Executive Chef Sankha Das Mahapatra, she will present a menu inspired by the food and cooking traditions of the region.
The menu explores the comforting, robust flavours that define Bihari cuisine, with a selection of traditional preparations showcasing its use of sattu, mustard, whole spices, slow cooking and smoky flavours.
Among the highlights is Champaran Ahuna Meat, a richly spiced slow-cooked preparation inspired by the traditional cooking of Champaran. The much-loved Bhojpuri Litti with Baingan Aloo ka Chokha brings together roasted litti and smoky chokha in one of Bihar’s most recognisable combinations. Muzaffarpur Murg Salan adds another regional expression of the cuisine, while Madhubani Fish Fry brings a crisp, flavourful element to the menu. Guests can also discover Dhuska with Kala Chana Ghugni, a traditional pairing that reflects Bihar’s simple yet flavourful approach to food.

Alongside these highlights, the festival will feature a wider selection of Bihari vegetarian and non-vegetarian specialities, allowing diners to explore the diversity of the region beyond its most familiar dishes.
At the heart of Magadh is food that feels familiar and generous – shaped by homes, family recipes and regional traditions. Chef Sushma Kumar brings this sense of home-style cooking to the experience, while Chef Sankha Das Mahapatra brings the menu together within Kaansa’s contemporary dining setting.
