Chef Ali steps into this role following a stellar career driving culinary excellence at some of the world’s most prestigious hospitality brands, including JW Marriott Juhu, Waldorf Astoria, St. Regis, the Jumeirah Beach Hotel, and The Taj Mahal Palace. Known for his operational mastery and innovative menu engineering, he will lead the hotel’s culinary teams to deliver unparalleled dining experiences.
Chef Ali’s core forte lies in Progressive Indian and Asian cuisines. Renowned for his ability to seamlessly blend traditional flavours with modern culinary arts, his expertise includes molecular gastronomy, avant-garde styles, and sous-vide mastery.
Throughout his career, he has collaborated with global culinary icons like Marco Pierre White, Mauro Colagreco, and Hari Nayak, and has catered to elite dignitaries, including U.S. President Barack Obama. His innovative approach to modern Indian cuisine has previously earned his kitchens critical acclaim, including recognition from the BBC GoodFood Awards and TripAdvisor.
